The airy, inviting bedrooms with white-washed floorboards swathed in pale rugs feature carefully chosen brocante furniture that’s both practical and beautiful to look at. Bathrooms are ultra modern and also chock full of style. Breakfast on the terrace on sunny days and drink in those amazing vistas of the city’s stunning medieval cathedral. We couldn't have been luckier to be at the Villa Caroline. One of us arrived ill and in need of rest. The (Cathedral) room was calm and comfortable, the view lovely. Mario was incredibly kind. His breakfasts, on the sunny terrace or indoors, delicious, just the right amount of everything - homemade yoghurt and jams, fruit, Spanish treats. A bonus for those wanting to picnic on local market produce, a small guest kitchen. We stayed longer than most, and the rest-cure worked! Mario and Patricia made all their guests welcome, and know the area well. Stay a few days.

  • Revel in our regional specialties, you cannot miss them, upon walks, in markets or restaurants. In traditional “bistrots” or gourmet restaurants alike, you will delight in our delicious foie gras, confits, charcuterie, cheese…all local products !
  • A savoury wonderland. Do you like delicate wines? Gaillac wine comes first with the variety of its fragrances and colors and its typical varieties made in a unique traditional way. Try a wine cellar to open up your senses to surprising discoveries.
