Hoteliers don’t do things by halves, and Nick is a case in point. He bought a crumbling pile, knocked the place down, then built it back up again. The result is a delicious hotel with huge views of beach and sea, a view framed triumphantly by walls of glass in the enormous restaurant and bar. Coastal light floods the room, there’s a balcony for afternoon tea, three chandeliers hanging above the bar, crushed velvet banquettes to salute Victorian roots and, with Turner Contemporary a five-minute stroll along the seafront, big canvases that resemble the great man’s work. Bedrooms have bags of style; nine have sea views, six have balconies and all have chic fabrics, padded bedheads, smart TVs and robes in fine bathrooms. There’s a roof terrace above for the best views in town and an ice-cream parlour and pizzeria below, but you’ll want to stop in the middle for the food as well as the view; perhaps gin and juniper-cured salmon, or confit pork belly with candied apple, finished off with a spiced pineapple tarte tatin. Canterbury, Broadstairs and Ramsgate are close and the train from Victoria takes less than two hours.
